About Parantha – These breads, called paranthas, are flaky and somewhat more elaborate than chappatis or rotis. The dough is rolled out and brushed with ghee or oil folded and brushed with ghee or oil again and folded again to form a layered slice.   This is then rolled out again.  this is then put on a hot griddle and brushed with oil.  The heat makes the layers of dough swell and puff, resulting flaky, pastry like flat breads. They may also be used as snacks, lunch-box favorites, light brunch items or traveling munching companions.  Allow 1 or 2 per person.
 

Ingredients:

2.5 cups chappati flour
1 cup water at room temperature
1 cup chappati flour in a large plate for dusting the dough while rolling it out
ghee for brushing the bread

Method to roll out the dough

Prepare Basic dough and allow to rest for 1 1/2 to 2 hours. To make triangular-shaped paranthas, divide the dough into peach-size balls. With a rolling pin, roll out 1 ball to a circle 5 inches in diameter.

Brush the circle of dough with ghee, and fold in half to from a crescent then brush again with ghee and fold into a triangle. Seal the edges well. Dust the parantha with finely sieved whole wheat flour and roll into a large, flat triangle or round parantha. Try to make the edges slightly thinner to ensure uniform cooking. Rather than shaping all the parathas at one time, cook each one as the next one is rolled out.

Method of cooking the parantha

Preheat a cast-iron tawa over medium heat. Place the rolled dough on the palm of one hand and flip it over on to the tawa. When the color changes on the top and bubbles appear, brush ghee over the surface of the parantha and turn it over. Repeat the process of brushing the parantha on the other side.  Keep flipping it over till both sides are browned and spots appear on the parantha.  With experience the parantha will puff on the tawa.
To keep the paranthas warm as they are cooked, place them in a towel-lined bowl and fold over the sides of the towel. Serve hot.

About: Paranthas are sometimes stuffed with herbed potatoes, shredded radishes and cauliflower with its water squeezed out, peas and even sugar or dried fruit pastes. Cut into wedges, they are excellent finger foods for parties.  Allow 1-2 per person, depending on the size of the breads and the accompanying dishes. Serve with yogurt raita and Indian pickles.

Ingredients:

2 medium potatoes (boiled, peeled, mashed and cooled to room temperature)
1 tsp. Coriander powder
1 tsp. Cumin powder
1/2 tsp. amchoor powder/mango powder
1 green chili minced (optional)
1 tsp. Chilli powder
1 tsp. lime/lemon juice
salt to taste
finely chopped cilantro
2 cups wheat flour  

 

Directions:

1. Mix mashed potatoes, coriander powder, cumin powder, mango powder, chopped green chilies, salt, cilantro, lime juice and chili powder.

2. Make small balls of the mixture.

3. Take a ball of dough slightly thicker than chapati (large egg size or peach size) and roll it to a circle 4-5 inches in diameter.

4. Place Potato mixture on it and again make it into a ball.

5. Seal the edges completely so that the stuffing does not come out.

6. Flatten these balls and roll into a 6 inch circle.

7. Pre-heat the griddle (tawa). Turn it and spread little oil or butter and cook over low heat.

8. Turn it again and spread butter/oil on the other side.

9. Cook both sides till golden brown.

Serve with chutney, yogurt, steamed vegetable and Indian pickles.

According to me the girl should be working and mature enough to think about marriage proposal.

She should be physically and mentally mature for marriage.

Before marriage she should know about the background and the nature of the bridegroom.

The girl should know that she is not getting adjusted only with the bridegroom, but she has to adjust with all the family members.

The servants can play a important role in marriage proposals, they can report the whole home environment to the opposite party.

She has to go to other person’s house. She has to go through all the customs of the new house. As she has to adjust herself, the family members will not adjust with her.

As the people say the girl has three births:

One, when she is born in her parents house,

Second, when she is married,

Third, when she gives birth to child.

The girls should be graduate and they should to earn for their own needs. Young ladies will come from bad to good environment and brighten their future. One more reality in our society is that the daughter-in-law has to give birth to a baby boy. If she will not give birth to the baby boy the husband and his family will not accept and will not give her respect in the house. They will say her she is unlucky and she is not fit for this family, until she does not give successor to the family. Some family members force the husband to do second marriage if he is not having baby boy from the first wife. The women third birth is succesful only if she gives birth to a baby boy. This is how some people differentiate between girl and a boy.

The old women take out their frustrations from their daughter- in-laws for their own mental and heart satisfaction and ruin the lives of their own son’s family.   (Woman is the biggest enemy of woman).

Some traditional women make their own son realize that you are men you have self ego, your head should not be down in front of your wife. From the starting of the marriage, some traditional women advice to their son to keep your wives under your clutches. They should not have freedom to do anything on their own.

In Balika Vadhu, nowdays famous T.V. serial, the serial’s characters Basant and Dadi Saa play a realistic role in front of viewers. This will help in changing the mental status of traditional women and egoistic, boosted, angry men specially for those men who think women are just like cows who give birth to their generation and work like servants and if they are not able to give birth to their generation they say she has some defect. They will give taunts, look how she is surviving or she should sent to her parents house etc.
Many T.V. serials came to change the mind of the viewers and to show the viewers what is happening in the society. Balika vadhu is becoming famous and interesting day by day. 
Balika Vadhu is a good inspiration to the now days traditional environment which has not been removed as yet. By seeing this serial, this can help in removing the social evils from the roots of the society.

Ballika Vadhu is a story about child marriage , they way they have scripted is very nice, it depicts the harsh reality of child marriage and how small kids life are affected by it. I personally felt this concept is much better than the regular saas – bahu saga.

The story’s main character is Anandi.

Anandi, the child heroine is projected as a typical child, believing everyone and everything and we are going to see how she grows up slowly – how she is going to change. It is going to be happy/sad mixture – happy to see how she copes up with the situations, sad to see her suffering while facing the problems, the negative side of people, she has to deal with. Now she thinks if she lies, her nose will bloat! She feels sad for small things and within seconds, with the next sentence, she forgets everything and is happy again.

The incidents which are shown in the serial are still happening. The girls are not allowed to go to school, or allowed to go to school till they are 10-11 years old. Afterwards they are asked to do household work. Like daadisa says – first Anandi has to learn to cook and take care of the house. Anandi has got a good mother in law – best mother in law – who is there to protect her like a mother always. I liked the way Anandi said when Jagdish was eating slowly – we should eat food slowly for it to get digested easily – with a big smiling face because her stomach was full!

Not only backward small cities, In big metropolitan cities, some parents marry their daughters at the age of 17, if they are getting a rich man proposal (they don’t bother if the girl is graduate or not) just thinking that the girl will be happy. They don’t look the family background (whether the previous daughter-in-laws are happy or not) and force the girl to live and adjust in that house.

Once the girl is settled and has given birth to children, she thinks this is now her own house and sacrifices her own life. The girl becomes an obedient wife of her husband and the husband and his greedy family members take advantage of this. In some families, if one family member is working, rest of the family members will enjoy his earnings and if the brother’s of the earning member are greedy, they will create misunderstandings between husband and wife and mother-in-law. The head of the family will take side of the greedy brothers to satisfy her own needs and frustration. They will get her tortured both mentally and physically by her husband and mother-in-law will give taunts to her.

One day when children grow up and say how you are living in such type of environment and loosing your respect. The girl who become now woman thinks now it’s the high time to leave the house and make my own self-respect and bright future. When she feels that dogs are respected more than her and other family members, her own husband thinks that she is an orphan.

About:

It is a north Indian favourite delicious recipe.

 

Ingredients for kofta:
2 kg Lotus Stem
2 tsp. garlic paste
2 tsp. ginger paste
2 tbsp. besan
Salt to taste
Oil for deep frying

 

Ingredients for gravy:
2 onions grated finely
1 tsp. jeera powder
1 tsp. dhania powder
2 tomatoes chopped finely
Salt according to taste
Red chili powder according to taste
1 tsp. Turmeric powder
2 tbsp. Oil

Directions:

 

For koftas

1. Peel of the lotus stem

2. Put it under the tap and wash it properly from the inner holes.

3. Grate it finely

4. Put 2 tsp. of ginger and garlic paste

5. Put little besan, add Salt according to taste

6. Mix it properly and make it in a smooth dough

7. Put oil for frying in a karai

8. Make small balls of the dough and deep fry it till it turn into golden brown.

 

For gravy

1. Take a karai, put oil in it

2. Put grated onions in it , sauté it, till it turns to light brown

3. Put all the masalas and stir it , put tomatoes and salt, stir it

4. Put water according to thick gravy you want

5. Take a boil and Put koftas in the gravy

6. Garnish it with coriander leaves.

It is ready to serve.
